Arugula is a fast-growing, leafy green known for its peppery flavor and versatility in the kitchen. Here’s how to successfully sow, grow, and harvest arugula, with insights into the unique characteristics of different arugula varieties.

When to Sow

  • Outdoors: Sow arugula seeds directly in early spring or late summer when soil temperatures are around 50-70°F. Arugula thrives in cool weather and can tolerate light frosts.
  • Indoors: Start seeds indoors 4-6 weeks before the last frost for an early spring harvest.

Sowing Arugula

  • Outdoor Sowing: Choose a sunny to partially shaded spot with well-drained soil. Sow seeds 1/4 inch deep, spacing them 1 inch apart in rows 6-12 inches apart. Keep the soil consistently moist until germination (5-7 days).
  • Indoor Sowing: Use seed trays with well-draining soil. Sow seeds 1/4 inch deep, and once seedlings have a few true leaves, transplant them outdoors.

Care & Maintenance

  • Watering: Keep soil evenly moist but not waterlogged, especially during hot weather.
  • Light: Arugula grows best in full sun but can tolerate partial shade.
  • Fertilizing: Arugula doesn’t need heavy feeding but can benefit from a light application of balanced fertilizer.

  4. Astro Arugula/Rocket

Harvesting Arugula

  • When to Harvest: All varieties can be harvested when young for a tender texture. Mature leaves have a stronger flavor and tougher texture. Harvest leaves as needed by pinching or cutting them just above the base of the plant. For the best flavor, harvest in the morning before the sun warms the leaves.
